Leche Flan also known as caramel custard is one of the favorite dessert of all time. Commonly served on birthdays, fiestas and special gatherings. This is a dessert  is made up of milk, eggs and caramel on top. I've tried a lot of recipes in making a rich, mouth-melted flan but the secret I guess is the way of its preparation.

                   Preparation time: 30 mins
                   Cooking time:      1 hour
             

                   Ingredients:
                   Leche Flan
                   1 can (390gms) of condensed milk
                   1 can (390gms) evaporated milk
                   10  egg yolks
                   1 teaspoon of vanilla or lemon essence

                   Caramel Sauce
                   1 cup white sugar
                    3/4 water 

   Preparation:
 1. In a saucepan, mix sugar and white sugar. Bring to a boil for a few minutes until the sugar  
   caramelize.
 2. Pour the caramelized sugar into aluminum molds.  
 3. Mix well the evaporated milk, condensed milk, egg and vanilla using a wire whisk. Mix slowly in one motion. This will prevents bubbles in your mixture.
 4. Gently pour the mixture (use cheese cloth to prevent bubbles) into molds about 1 1/4 inch thick.
 5. Cover molds with aluminum foil.
 6. Preheat steamer for 10 minutes over low fire. Place the molds and steam for about 20 minutes.
 7. You can tell when the Leche flan is cooked by inserting toothpick and if it comes out clean it is already cooked.
 8. To serve insert knife around the edges of the mold to loosen the flan. Place a platter on top of the mold and turn upside down.
